Determination of total arsenic in crab meat

The capture of crab in Brazil is an economic activity that has been growing along with its consumption. However, due to the intense pollution of the water with garbage and industrial waste, bioaccumulation of arsenic in marine organisms occurs. Consequently, humans may be exposed to contamination by this toxic metalloid with health risks for the population that appreciates crab meat. Thus, the objective of this research was to evaluate the arsenic content in samples of crab meat purchased from three different sale places of Natal/RN. Total arsenic was determined by molecular absortion spectrophotometry, and the mineralization of the samples was done by dry route. The three samples tested had concentrations of arsenic (As) below the maximum allowed value of 1.00 mg/kg, mean values and standard deviation of samples were 0.592 ± 0.000, 0.579 ± 0.164 and 0.660 ± 0.000 mg/kg, respectively.
